Sabudana Vada ( Tapioca Potato Dumplings)

Fry and serve these hot to get the best taste. This recipe will serve 4 people.

Ingredients:

  • 3 medium potatoes
  • 1/2 cup tapioca (sabudana)
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon cumin seeds (jeera)
  • 1/4 cup finely chopped cilantro ( hara dhaniya)
  • 1/4 teaspoon garam masala
  • Oil to fry

Method:

  • Wash the tapioca and soak it in 3 cups of water for a minimum of 2 hours.
  • Drain the water. After soaking tapioca becomes double in size.
  • Boil the potatoes, cool them, then peel and grate them using a vegetable grater.
  • Mix all the ingredients together. The dough will be a little sticky and soft in consistency.
  • Divide the dough into 16 parts and make small patties. Grease hands with oil if the dough is sticky.
  • Heat oil in a pan. To check if oil is ready deep fry a small dough in the oil - it should rise to the surface and not change color immediately. Deep fry the patties until golden brown on both sides.
  • After frying remove vadas in a paper towel to absorb excess oil. The vadas should be crunchy on the outside and soft inside.
  • Serve them hot with any chutney/dip of your choice.
